Step:
Prepare the ingredients; chop the onions, pepper, tomato and set aside. Break the eggs into a plate.
Heat up the oil in a pan, saut the onion for few seconds, then add the chopped pepper and tomatoes and fry for 3-5 minutes.
Add the seasoning cube, curry, thyme, ginger and garlic powder and continue frying till the tomato dries up, you'll notice when it's started sticking to the pan.
Beat the eggs and pour in, leave to set for few seconds then use a spoon to be stirring and breaking it up into smaller pieces. Taste for salt now and add if needed.
When the eggs are all set (no runny part), bring down from heat and serve with either boiled or fried yam, potato, plantain, or with rice, pasta, bread etc, the list is endless.
