Step:
Wash, drain & chop/slice the Spinach Leaves, after removing it's stalks & also slice the Onions- real thin
Heat the measured oil in a pan/wok/kadhai & sauté the onion slices until light golden brown & add in the 3G Paste to it & keep sautéing until the raw smell goes off
Now, add in the curry leaves & turmeric and red chilli powder and keep sautéing for another couple of mins time by reducing the flame to low-medium
Add in the Spinach Leaves now, mix well & keep sautéing for sometime- heat should be low-medium, add into it salt & continuing frying for the next 2 mins time again
Now, break in the eggs- side by side, sprinkle some salt & black peppercorns powder on the yolks & cook for a minute by covering it the pan-lid
Now, open the lid- Fold in the Eggs with the cooked Spinach, sprinkle some Garam Masala Powder to it & give it a nice final mix until all well combined & incorporated
Scramble the entire thing & cook for another couple of mins on the low-medium heat & then, remove it from the oven and serve hot on the platter

3 Cups Spinach (Finely Sliced/Shredded)
1 Large Onion (Thinly Sliced)
3 tsp ginger garlic and green chillies paste
2 Spring Fresh Curry Leaves
To Taste Salt
2-3 tbsp Cooking Oil
1/4 tsp Turmeric Powder
1/2 tsp Red Chilli Powder
1/4 tsp Garam Masala Powder (Homemade)
1/4 tsp Black Peppercorns Powder
