Step:

  1. Cook potatoes and dice into bite sized pieces

  2. Mix oil, vinegar, mayo, and mustard together in a bowl

  3. Pour mixture over warm potatoes (allowing mixture to soak in), refrigerate until cool

  4. Add remaining ingredients and mix well

Ingredients

  1. 6 cups potatoes, diced
  2. 5 hard boiled eggs, chopped
  3. 1 cup celery, diced
  4. 1/2 cup dill pickle, diced
  5. 1/4 cup diced pimento
  6. 1 tbsp yellow mustard
  7. 2/3 cup mayonnaise
  8. 6 tbsp olive oil
  9. 2 tbsp wine vinegar
  10. 1 1/2 tsp salt
  11. 1/2 tsp ground pepper
