Step:

  1. Roast all your peppers in the oven under a high-heat broiler, top rack. (It is usually preferable to remove the skin from the roasted peppers since the skins will make the sauce a little tangy, but its not absolutely necessary.)

  2. In a medium skillet, heat oil over med-high heat until shimmering. Add onion and cook until translucent and soft (approx 5 mins). Add garlic and saut for maybe a minute longer.

  3. Add all ingredients into a food processor and blend well so that no large chunks remain.

  4. Pour blended sauce into a small sauce pan and heat on low-med for 10-15 mins. Serve atop anything you choose and ENJOY!!


Ingredients

  1. 2 poblanos, roasted, skinned and seeded (you can also use Anaheim, New Mexico, or Mild Hatch chiles. Make sure the sizes of the peppers are comparable or adjust your quantity to match)
  2. 1 cup chicken broth
  3. 1/2 white onion, finely chopped
  4. 2 cloves garlic, minced
  5. 1/3 cup cilantro, chopped
  6. 2 tbs oil (any neutral flavored oil will do)
  7. 2 tsp ground cumin
  8. 1 lime, juiced
  9. to taste Salt & Pepper,
  10. Optional:
  11. 1-2 jalapeos or serranos if you want to increase your heat (since Poblanos are a mild pepper)
