Step:

  1. Preheat oven to 350.

  2. In one bowl mix fry ingredients and in another mix the wet ingredients then combine.

  3. BARELY MIX. It will look too thick and dry to be a batter but It's NOT.

  4. Scoop half of the batter mix into a greased loaf pan.

  5. Cover with remaining batter mixture.

  6. Sprinkle a little granulated sugar on top and bake 45 minutes.

  7. Mix cream cheese and powdered sugar together and pour in the center distributing to almost each end.

Ingredients

  1. 1.5 cups flour
  2. 1/2 cup brown sugar
  3. 1/2 cup white sugar
  4. 1/2 teaspoon baking soda
  5. 1/2 teaspoon baking powder
  6. 1.5 cups grated zucchini (skin left on)
  7. 2 teaspoons vanilla
  8. 1 egg
  9. 2 teaspoons cinnamon
  10. 1/2 teaspoon nutmeg
  11. Filling:
  12. 8 oz softened cream cheese mixed with 1/4 cup powdered sugar
