Step:

  1. Pour cold beer and water over potatoes, bay leaf, and garlic in a medium sized saucepot. Make sure the water level covers the potatoes by about an inch.

  2. Boil until potatoes are easily pierced with a paring knife.

  3. Drain potatoes and return to pot. Crank to high heat. Shake pot for 20 seconds. Turn off heat.

  4. Melt butter in a small saucepan. Pour over potatoes. Fold gently with a stirring spoon.

  5. Sprinkle cheese, salt, and pepper. Fold in gently. Serve.

  6.   1. 2 large Idaho potatoes; peeled & medium dice
  2. 2 cloves garlic; peeled
  3. 16 oz PBR beer
  4. 1 bay leaf
  5. 1/4 C grated parmigiano reggiano
  6. 1/2 stick butter
  7. 16 oz cold water
  8. as needed kosher salt & black pepper
