Step:

  1. Dry roast together all whole spices for 2-3minutes on low flame,exept nigella seeds and carom seeds.

  2. Dry grind the spices.Keep aside.

  3. Peel and cut mango into pieces,discard seeds.Crush mango pieces with the help of a grinding stone.(you may grate coarsely the pieces,if grinding stone is not available)

  4. Put the crushed mango into a bowl,add ground spices,red chilli powder,turmeric powder,ginger and garlic.Mix well.

  5. Add salt and mix.Add whole nigella seeds and carom seeds.Mix them.

  6. Now transfer mango into an airtight glass jar or air tight plastic jar.Pour mustard oil over mango.Shake a little.

  7. Cover the lid and put the jar in sunlight for 3-4days.Aam kuchcha is ready to serve.

  8. Serve with meals.

  1. 500 grams raw mango
  2. 200 ml mustard oil
  3. Whole spices:
  4. 2 tbsp coriander seeds
  5. 2 tbsp fennel seeds
  6. 1 tbsp yellow mustard seeds
  7. 1 tsp carom seeds
  8. 1 tsp fenugreek seeds
  9. 1 tbsp cumin seeds
  10. 1 tsp nigella seeds
  11. 3 tbsp red chilli powder
  12. 2 tsp turmeric powder
  13. 3 tbsp crushed garlic
  14. 1 tsp chopped ginger
  15. to taste Salt
