Step:

  1. Peel and dice sweet potatoes into 1/2 inch pieces

  2. Place in medium pot with enough salted water to cover by 2 inches. Bring to a boil and cook until tender (15-20 minutes)

  3. Mash until smooth, add in butter, sour cream, and salt.
