Step:

  1. Bring 2qt water to a boil in a large saucepan over medium-high heat. Stir in 2 Tbsp salt and stir until dissolved

  2. Add ear of corn and coom until tender, approx 4min. Remove corn and set aside until cool enough to handle, approx 10min

  3. Return water to a boil. Add potatoes and cook until tender, approx 15min. Drain. Let cool approx 15min

  4. Combine onion and vinegar in large bowl. Let stand 10min. Stir in celery, mayonnaise, chopped basil and dill, pepper and remaining 2 1/2tsp salt.

  5. Cut corn off cob. Discard cob.

  6. Add corn and potatoes to mixture. Stir to combine. Lightly smash mixture together until creamy

  7. Cover and chill at least 1 hour and up to 3 days.

  8. Season to taste with salt and pepper

  1. 2 qt water
  2. 2 Tbsp + 2 1/2tsp kosher salt
  3. 1 medium ear fresh yellow corn (husked, silk removed)
  4. 2 1/2 lb baby red potatoes cut into 1in pieces (approx 7 1/2cup)
  5. 1 small yellow onion (finely chopped, approx 1cup)
  6. 3 Tbsp white wine vinegar
  7. 3 medium celery stalks (finely chopped, approx 1cup)
  8. 3/4 cup mayonnaise
  9. 3 Tbsp fresh basil (chopped)
  10. 1 Tbsp fresh dill (chopped)
  11. 1 tsp black pepper
