Step:

  1. Spread pineapple in even layer on baking sheet lined with parchment paper. Freeze at least 8 hours or up to overnight

  2. Place frozen pineapple, coconut cream, agave and salt in food processor. Pulse until finely chopped, approx 40 times

  3. Process until smooth and airy, approx 3-4min. Stop to scrape side of bowl as needed

  4. Serve soft or store in airtight containerand freeze until firm, approx 1 hour

Ingredients

  1. 1 1/2 lb fresh pineapple chunks (cut into 1/2in pieces)
  2. 1 1/4 cup unsweetened coconut cream
  3. 1/4 cup light agave nectar
  4. Pinch kosher salt
