Wash Bhindi, keep them aside in a drainer till it dries completely. Cut them into four long pieces and keep them aside.
Meanwhile prepare masala, put oil in kadai, crackle whole garam masala, bay leaves, black pepper, cloves and cardamom add grated onion, stir it till it turns golden brown.
Add other spices and cook it for five minutes then add garlic, ginger paste and tomato puree, cook it again for some time till the oil gets separated then add salt and half katori water and cook it again for five minutes.
Your masala gravy is ready. Before serving,heat oil in a pan deep fry or shallow fry Bhindi and garnish it over masala curry and serve it hot. It will taste very crispy and spicy.

250 gm. Bhindi
2 big size onion grated
4 tomatoes puree
1 garlic paste
1 small piece of ginger paste
Whole garam masala- bay leaves, 5 green cardamom, 8 black pepper
