Step:

  1. Make heavy cream sauce with flour,butter and scalded milk;cook in double boiler. Flake lobster,form into chop. Dip in cracker crumbs,then in beaten egg; again in cracker crumbs.fry in butter,serve with tartare sauce. Two cups of cooked ground chicken may be used instead of lobster.
