Heat the oil in a frying pan over a high heat and brown off the pork, draining off the liquids when evenly coloured

Add the sauce into the pan and bring to the boil
Turn down to a low simmer. Check and stir after 15 minutes
Check and stir after another 15 minutes
Reduce until there is around 4 tbsp sauce left in the pan. Another 10 - 15 minutes should do it so this whole process should take 40 - 45 minutes
Serve with boiled rice, noodles or mashed potatoes and vegetables

2 tbsp oil
900 g (2 lb) diced pork
1 tbsp finely chopped garlic, around 5 cloves
1 tbsp finely chopped ginger, around a thumb-sized fresh piece
4 tbsp soft brown sugar
