Step:

  1. In one pan, fry the bacon and set aside

  2. Mix the eggs, milk and cheddar and add to another pan on a very low heat for the egg to scramble really slowly. It allows for the cheese to melt but not burn

  3. When the eggs are about 60% cooked, add the jalapeño and mix in

  4. Toast the rolls or bread and butter them

  5. Layer the bacon then eggs on the roll and serve while hot.

  1. 4 eggs
  2. 1 pickled jalapeño (chopped)
  3. 4 round cut bacon
  4. 2 bread rolls/4 slices bread
  5. 50 g grated white cheddar
  6. Butter (for frying and spreading)
  7. 4 tablespoon milk
  8. Optional--chopped spring onion for garnishing
