Step:
First of all, make a smooth paste of Charoli seeds, Almonds, Cashewnuts and Green chillies. Marinate the Chicken with all the powdered spices and this paste. Keep aside for 2 hours. Do not add the Whole spices.
In a large vessel, heat Oil and Ghee both. Add the whole spices. Saute for a minute. Now add the fried and crushed Onions, beaten Yoghurt and the Tomato puree. Allow it to cook for a minute or two on a low heat. Now add the marinated Chicken. Cover with a lid. Allow to cook on a medium high heat at first for 10 minutes. Then simmer for a good 20 minutes until done on a low heat. I have added a few Whole Green chillies too. It's optional.
Do not add water at all. The Chicken should get cooked in it's own juices. Mix in the food colour. Garnish with chopped Coriander and Mint leaves. Spring Onions are an excellent option. Though it's not a must. Serve this juicy Red Chicken with a lovely gravy that will make you fall in love with it. The aroma is heavenly.
