Step:
Heat oil in a pan. Saute Ginger and Garlic paste at first. Now add Onion Chunks, Capsicum cubes and chopped Green Chillies. Also, add the rest of the ingredients listed and saute for a minute or two before covering with a lid.
Leave it on a low heat to simmer for 12 minutes or a little more. Do not overcook. The crunch of the vegetables should be retained. In between, keep stirring and see to it that it doesn't get burnt at the bottom.
After 15 to 20 minutes, it is fully done. Garnish with more of coriander leaves before serving hot to your loved ones. It goes well with Parathas, Pooris, Chapatis, Pulaos and even simple boiled rice and pickle.
