Step:
On a medium heat pan, add 2 tbsp vegetable cooking oil then add some carrot, onion and peas in then stir well.
Add some tomato sauce, sriracha sauce, oyster sauce, fishsauce and pinch of salt and pepper. Mix well.
Add your cold rice in the pan a stir well together.
On another non stick pan, heat up your pan on low heat. Beaten your eggs and add a pinch of salt and pepper. Add some cooking oil on to a kitchen towel and wipe it all around on the surface of your pan. Add your omelette on your pan and swirl your omelette all around to make a thin omelette.
Once your omelette is about 70% cooked, add your stir fried rice in and make it into rugby shape.
Then fold both sides of your omelette up to make an oval parcel. Put a plate on top of your pan (one hand hold your pan’s handle and one hand hold on to the back of your plate) flip over your pan so you transfer your omelette into your plate up side down.
Then use kitchen towel cover your omelette to form it to the rugby shape.
Add some more tomato katchup before serve. It’s so so comfortingly delicious!!
