Step:
Take a mixing bowl add Semolina, curd mix it all well. Add water mix it and close the lid keep aside for an hour.
After an hour add salt, crushed ginger-green chillies. Mix it all well if required add water to get the consistency.
Now take a steamer or deep vessel. Pour water and put a ring. Let the water get boil on medium-high flame. Grease the Dhokla plate/ thali or cake tin in which you want to make dhoklas.
Now add baking soda to the batter. Add water and give a nice whisk. Pour the batter in greased tin. Tap it. Get it leveled.
Put the tray or plate in the steamer. Close the for 15-20 mins. Open the lid check it with a toothpick. Turn off the gas. Take out the tray let it get cool.
Now scrape it from the sides with the help of the knife. Put a plate on the tray and flip it upsidedown. Whole will come out easily. Cut into pieces.
Now while making sandwiches cut the Dhokla pieces from the middle. Cut all Dhokla pieces.
For Stuffing: take a bowl smash boil potatoes add chopped onion, salt.
Add coriander leaves. Make small balls out of the stuffing. Place the stuffing ball on one half piece of Dhokla and spread it. Fill the stuffing in all.
Cover with another Dhokla piece. Same way make all Dhokla Sandwiches.
Get tempering ready. Put pan on low flame add oil, mustard seeds. Get crackled add Curry leaves(optional) and red chilli powder.
Place all stuffed Dhokla Sandwich pieces in the pan on low flame. Toast it from both the side till golden and crispy.
Stuffed Semolina Dhokla Sandwich is ready. Crispy from outside, soft inside and super filling inside too. Enjoy with ketchup and tea

For Dhokla-
1 cup small Semolina
1/2 cup curd
1/2 cup water
1 tsp Green Chillies-Ginger crushed
as per taste Salt
1/4 tsp Baking soda
3-4 tsp water
For Stuffing-
2 Medium Potatoes Boiled
1 Small Onion (finely chopped)
1/2 tsp green chillies- ginger crushed
2 tsp chopped coriander leaves
For Tempering-
2-3 tsp oil
1 tsp mustard seeds
1/2 tsp red chilli powder
