Step:
Baati : combine the ingredients for baati in a bowl till the texture looks crumbly. Add a little bit water at a time to make a dough that is little stiffer than for rotli. Cover and set it to rest for minimum 10 min. Make smooth balls out of it. Bake them for 30-40 min in preheated oven at 180c. You may need to check in between to flip them to get evenly baked baaties. Roll them in ghee.
Dal: Wash and soak dals in warm water for minimum 1 hour. Pressure cook them till the pressure releases thrice. In a pan heat up ghee. Add mustard. Add jeera when mustard crackles. Add garlic and wait till it changes to light brown. Then add onions and fry till it's soft and translucent.
Add green chillies, salt, asafoetida, turmeric, red chilli powder, garam masala and dhaniya jeera powder. Add 2 tbsp water to allow the spices to get cooked well. Add tomatoes when oil oozes out of the onion. Cook till they are soft. Add Dal (along with water) in it.
Adjust consistency. Dal must be not too thick or too thin. It should have the consistency like tadka Dal.
Garlic chutney: Combine garlic cloves, chilli powder, dhaniya jeera powder and salt in a mortar. Pound them into paste. In a tadka pan, heat oil and add the garlic paste. Fry a bit and then add 1-2 tbsp water. Boil till oil oozes on the surface.
To serve: take Dal in a bowl. Break a baati into it. Top it up with garlic chutney, chopped onion and some ghee. Serve hot.
