Step:

  1. Shallow fry the chicken in saucepan until golden. Set aside

  3. Return the chicken and add the remaining ingredients. Bring to the boil and simmer for 20 mins. Serve with pasta.

  1. 2 tbsp olive oil
  2. 1 large onion, finely chopped
  3. 2 garlic cloves, finely sliced
  4. 1 red pepper
  5. 500 g mini chicken breasts
  6. 1 large thyme sprig
  7. 2 tbsp tomato purée
  8. 2 x 400g cans chopped tomatoes
  9. 1 tbsp clear honey
  10. 20 pitted kalamata olive, halfed
  11. 2 tbsp caper
  12. Pasta, to serve
