For bhaji, add all the veggies in section 1 except peas and paneer cubes in a pressure cooker, add salt and 1/2 cup water and cook for 2 whistles and 10 minutes on low flame.
Now when the steam from the pressure cooker is released naturally, mash the vegetables with the help of a potato masher. Before doing so, remove any excess water if present.
Now for tadka, heat oil/ butter in a deep kadhai, add onions and saute till translucent. Then add ginger garlic paste and mix. After that add tomatoes and all the spices. Let the mixture cook for 2-3 minutes.
Now add the mashed vegetables in the tadka and mix well. Add boiled peas and some paneer cubes (save some for garnish).
Your pav bhaji is ready. Add some paneer cubes and butter from the top before serving. Lemon can also be added. Serve with fresh Pavs (roasted on tava with butter), sliced onions and mint chutney.
