Step:

  4. Pat the pork dry then rub it all over with the marinade

  5. Put it on the wire rack into the oven and roast for 30 minutes per pound

  6. Let it rest for 15 minutes before slicing. Serve with mexican rice, roasted red onion, bell peppers and sweetcorn

  3. 2 tsp chilli powder
  4. 1.5 tsp ground cumin
  5. 1 tsp dried oregano
  6. 1 tsp smoked paprika
  7. 1 tsp garlic powder
  8. 1/2 tsp onion powder
  9. 1/2 tsp ground black pepper
  10. 1/4 tsp cayenne pepper
  11. 3 tbsp olive oil
  12. 2 lb boneless, rindless rolled pork joint
