Step:
Wash and clean methi leaves and keep in a colander for excess water to drain out. I chop methi leaves in my food processor and add flours in the same to knead the dough. Add wheat flour and besan to the methi leaves.
Also add chilli powder, turmeric, carom seeds and salt. Add green chilli and ginger. Add finely chopped methi leaves. give a rough mix making sure the spices are combined well.
Now add half cup of curd and combine the dough well, add some water and knead the dough. The dough should be of smooth and soft texture like of chapathi dough.
Add 2 tsp of oil and knead the dough for 5 more minutes. Keep aside for ten minutes
Now pinch a medium sized ball dough, roll and flatten it, dust with some wheat flour.
Roll it in a thin circle like chapathi and on a hot tawa place the rolled thepla and cook. Flip the methi thepla and brush oil / ghee and press slightly.
Remove from the tawa when done. Enjoy with aam chundu
