Step:

  1. On medium heat add olive oil, onions and carrots, cook stirring about 5 minutes. Add sausage and potatoes. Stir for 2 minutes then add broth. Bring to boil then reduce heat to low about 30 minutes. Enjoy

  2. 1/2 cup diced carrot
  3. 2 garlic cloves diced
  4. 1 lb Smoked turkey sausage
  5. 6 cups homemade vegetable stock or store bought
  6. to taste salt and pepper
  7. 1 bunch spinach
  8. 2 Tbsp fresh thyme
  9. 1 lb tiny potatoes whole unpeeled
  10. to taste salt and pepper
  11. 1-2 Tbsp fresh parmesan cheese
