Step:
Wash chicken mince and either make a paste of it or parboil it to eliminate raw taste.Dry up the water.Grind 2 bread slices and mix in chicken.Heat 1 tbsp oil in a non stick pan and add chopped onion.Fry till transparent.Add green chillies, chicken mince, red chilli powder, black pepper powder, garam masala, chopped coriander and salt to taste.Toss all and form a dough.
Take a portion of the mixture and shape into cutlets.Make a batter of cornflour and maida. Dip each cutlet in this batter then roll in breadcrumbs.
Coat all cutlets and let it rest for sometime.Heat oil in a pan and deep fry the cutlets 2 at a time.
For the egg nest beat 2 eggs with little cornflour and pinch of baking powder. When the oil is hot sprinkle egg batter quickly with hand. This will give a net like appearance.Dip the cutlet in the nest and quickly wrap it. Remove from oil and place on a kitchen towel to remove excess oil.Serve with sliced onion, cucumber and tomato and chilli sauce.
