Cut the Hilsa fish into medium pieces and wash them with clean water. Drain the water and keep the fish aside.
In a bowl, mix Chinigura rice and Mung dal together and wash with water. Soak it half an hour. Drain the water and keep them aside.
In a frypan, put some oil and heat it on stove. Put 1/2 cup chopped onion and fry untill onions become golden brown. Then bring out the birista from flame and keep them aside.
In another frypan, put some oil and heat it on stove.Put bay leaf into it. Put chopped onions and Green Chilli with salt. After frying 1 minutes, put ginger garlic paste, green chilies paste, coriender powder and cardamoms.cook 5 minutes.
Now put pieces of Hilsha fish into it and cover the frypan. When Hilsa is 80% cooked, open the frypan and bring out the fish Pisces from the spice separately and put them another bowl.
Now on that spicy frypan, put the soaked Chinigura rice and Mung dal mixchure and fry in a medium low flame for 5-6 minutes. Now put 1.5 kg water into it and cover the frypan. When the rice is 80% cooked, open the frypan and bring out half of rice and put the cooked Hilsa Pisces in the middle of the rice. Then spread another half of rice with some green chillies on the top of the Hilsa Pisces. Cover the pan and cook more 10-15 minutes.
When rice is 100% cooked, spread the onions birista on the top of the polao.Ilish polao is ready to serve. Enjoy the rainy season with the authentic flavor and taste of it.

1 Hilsa fish cut into medium pieces
1 kg Chinigura rice soaked in water
1.5 kg water for rice
1/2 cup chopped onions birista
3 tablespoon chopped onions
1/2 cup mung dal soaked in water
5-6 green chillies
1 teaspoon green chili paste
1 teaspoon coriender powder
Mustard oil as required
1/4 teaspoon ginger-garlic paste
2 cardamoms
2 bay leafs
Salt as required
