Step:

  1. Wash the okras, dry them and slit vertically into about 2 inch pieces.

  2. Heat mustard oil in a pan, add the okras and stir fry on high heat for a couple of minutes.

  3. Then reduce heat to medium low and fry the okras till they are soft and keep aside.

  4. Heat oil in the same pan and add cumin seeds and when they splutter add sliced onions, garlic and chopped ginger.

  5. Sauté till the onions turn light brown and slightly caramelized.

  6. Add turmeric powder, red chilli powder, coriander powder, sabji masala and salt and fry for a couple of seconds.

  7. Then add the cooked okras and sliced tomato and stir fry for around 3-4 minutes.

  8. Finally add garam masala powder(optional) and amchur powder and mix well gently

  9. Garnish with chopped coriander leaves and serve hot with rotis or parathas

  1. 20-25 okras / bhindi / lady's finger
  2. 2 onions, medium sliced
  3. 4 clove garlic chopped
  4. 1 tomato, medium sliced
  5. 1 inch piece ginger, chopped
  6. 1/4 teaspoon turmeric powder
  7. 1/2 teaspoon cumin seeds / jeera
  8. 1 teaspoon sabji masala
  9. 1/2 teaspoon red chilli powder
  10. 1 teaspoon coriander powder
  11. 1/4 teaspoon garam masala powder
  12. 1/2 teaspoon amchur powder
  13. 2 teaspoon mustard oil
  14. 1 teaspoon Coriander leaves chopped for garnishing
  15. 1/2 teaspoon Salt or to taste
