Cut aluminium foil into squares of about 10cm*10cm
Invert glass upside down. Center the foil on it and press down the sides. Use one with a wide mouth than bottom. Do this for all the other pieces. Brush with butter or oil and set aside. (You can stack two if you feel they're thin)
Light your charcoal jiko. Find a large heavy bottomed sufuria, two lids one that fits inside the sufuria to hold the liners and one to cover on top.
Sift flour, salt and baking powder. Whisk together with sugar and set aside
In another bowl mix butter, eggs, milk and vanilla. Mix this to the dry ingredients until combined. Take heaping tablespoon into each liner and arrange close to each other in the lid in the sufuria. This recipe gave me 12 muffins
Cover the sufuria when done. Add hot charcoal on top and leave some in the jiko. I used more than I would for normal cakes since the sufuria was a bit big and heavy. Mine baked for 20-25mins.
Check with a skewer or toothpick inserted in should come out clean. Then I put all the charcoal on the lid on top to brown my muffins a bit for 5mins. Allow them to cool and enjoy
