Step:
In a Pan roast the rolled oats on low flame for 5-6 minutes.
Once the oats turn crisp, let them cool. After the oats are at normal room temperature, transfer them to a mixing grinder and make a fine powder out of that.
In a pan, heat up oil and add Mustard seeds, Cumin seeds. Once they start to splutter add Urad dal, Chana Dal, Chilli. After 1-2 minutes add ginger paste. Saute for few seconds.
Then add carrot and capsicum and again saute for 1-2 minutes.
To it add turmeric powder and cook till raw smell of turmeric powder goes away.
Now to that add 1/2 cup Semolina an roast on low flame.
Once the Semolina start giving aromat smell, mix Oats powder to that and mix well on low flame for 2-3 minutes
Now let the mixure cool.
Once the mixture cools, transfer it to a mixing bowl, and add 2 tsp curd and chopped coriander
Add salt as per taste and pour in water and make idli batter consistency. Keep it aside for 15-20 minutes so that Semolina absorbs all water.
Grease the idli plate. Add in mean time preheat the idli maker.
After 20 minutes add pinch of baking soda and mix well.
Pour the batter in idli plate and steam the idli on medium high flame for 10-12 minutes.
After 12 minutes check the idli, and let it cool for 5 minutes. After 5 minutes, demould the idli and serve with sambar and chutney of your choice. ENJOY!!!
