So the first thing you gotta do is wash your rice and parboil it in boiling water for just some minutes. Mine was 5 minutes
In a pot, add in the oil and lots of onions and fry. After frying I reduced some of the onions for later
I added my tin tomatoes and blended peppers and ginger. I fried them nicely
Next I added the curry and thyme (trust me this are the only two spices you'll need). And I also added some bayleaves and Crayfish (for that authentic Naija Flavour and Aroma)
Season with Stock cubes to your taste. I then added water about a cup and allowed it to cook. You don't need water to cook the rice. Steam will do the job
Add in the parboiled rice. Scoop out the butter for shiny finishing. Add that onion that we fried. At this stage you can add your veggies too like sweet corn carrots and peas. Cover the pot with a foil and then the potcover.
Put your rice on a VERY LOW heat. And I mean very Low heat!!!! And literally forget about it.
After about 35 minutes my rice was done. It was fluffy, delicious and scented AMAZINGGGGGGâ¤
