Step:

  1. Cream sugar n margarine till light n fluffy

  2. Add eggs one at atime beating after each addition

  3. Add the lemon juice,zest and essence

  4. Sift flour n mix to form a batter

  5. If the batter is too thick you can add 1-2 tbs water or milk

  6. Scoop batter on muffin pan lined with paper liners 3/4 full

  7. Bake at 170℃ in a preheated oven for 20-25 mins

  8. If u wish to frost let them cool completely enjoy

  2. 200 g sugar
  3. 400 g self raising flour
  4. 1 lemon juice n zest
  5. 1 tbsp lemon essence
  6. 4 eggs
