Step:

  1. Peel and cut potatoes into 1 inch chunks

  2. Bring water to a boil in a large saucepan

  3. Add potatoes and boil for 25 minutes

  4. Combine garlic, butter, sit milk, pepper, salt & herbs de provence in small saucepan and saute on low heat

  5. Drain potatoes and mash well

  6. Combine potatoes with olive oil mixture

  7. Top with chives

  1. 1 teaspoon herbs de provence
  2. 5 pounds yukon gold potatoes
  3. 4 cloves garlic
  4. 8 tablespoons (1 stick) non-dairy butter
  5. 1 teaspoon pepper
  6. 1 teaspoon sea salt
  7. 1/2 cup fresh chives (chopped)
  8. 1 cup soy milk
