Step:

  1. In a large bowl sift the dry ingredients together add the liquid mixture (wet ingredients)and beat for 2mins.

  2. Add the eggs and vanilla and beat for another 2 mins

  3. Pour the mixture into lined cupcake pans and bake at 180C for 15 mins or until a toothpick inserted comes out clean.

  4. Cool completely and top with your desired icing.

Ingredients

  1. 1/4 tsp salt
  2. 1 tsp baking soda
  3. 1/2 tspn baking powder
  4. 1 cup sugar
  5. 1/3 cup cocoa powder
  6. 1 cup flour
  7. (Sift all the dry ingredients together)
  8. For the wet ingredients:
  9. 1/2 cup hot water
  10. 1 tsp coffee
  11. 1/2 cup oil
  12. 1/2 cup milk
  13. (Mix all together)
  14. 2 eggs
  15. 1 tsp vanilla essence
