Step:

  1. First of all Knead a soft dough by adding water slowly and keep it for 15-20 minutes to rest

  2. For fillings -Stir and cook everything nicely
    Let the filling cool down before you fill in the kachoris

  3. Pinch a small ball of dough

  4. Roll a bit by pressing in the palms only

  5. Fill with little of the prepared mix

  6. Seal the edges and carefully press again in palms

  7. There shouldn't be any crack or opening, otherwise the filling will ooze out while frying.

  8. Dont roll it just press in-between the palms.

  9. Keep the oil in a wok to heat up. oil should be very hot.

  10. Put kachoris one by one in the oil and fry for 3-4 seconds only. Take them out.

  11. When all the kachoris are fried once like this again put kachoris in the wok and now fry on low flame.

  12. At second frying you can put many kachoris at a time according to the size of your wok, but keep the flame low

  13. Keep stirring them up and down

  14. Take them out of the oil once they are nice brown in colour

  15. Enjoy with aloo ki sabzi or any chutney of your choice


Ingredients

  1. For the covering
  2. 500 gms maida
  3. 1 tsp crushed ajwain
  4. 1 tsp salt
  5. 2 tsp oil
  6. Water to knead
  7. Filling -
  8. 2 tsp oil in a pan
  9. 1 tsp mustard seed
  10. 1 tsp crushes whole dhaniya seeds
  11. 2 tsp besan-stir to roast
  12. 1 chopped Onion
  13. 1/2 tsp Garlic
