Step:

  1. On a large piece of wax paper together the spices

  2. In a small saucepan, over a medium heat the butter.

  3. Brush both sides of the snapper fillets with the butter mixture, reserve the remaining butter mixture.

  4. Coat both sides of the fillets with the seasoning mixture

  5. Heat a large cast-iron pan/skillet over high heat until a drop of water sizzled on it. Drizzle half the remaining butter and oil mixture on one side of the fish fillets and placed them butter side down in the pan

  6. Cook over a high heat until the fish is deeply browned. This will be about 5 minutes.

  7. Drizzle the remaining butter mixture over the fish and flip fish over. Cook until fish is brown and flakes when tested with a 4 also about an extra 5 minutes


Ingredients

  1. 1 teaspoon paprika
  2. Quarter teaspoon ground cayenne pepper
  3. 1 teaspoon ground black pepper
  4. 1/2 teaspoon onion powder
  5. 1 teaspoon dried thyme
  6. 1 teaspoon dried basil
  7. 1 teaspoon garlic powder
  8. 1/4 teaspoon dried a regular
  9. 2 tbsp butter
  10. 1 tablespoon light olive oil
  11. 6 (200 g) fillets of red snapper
  12. to taste Salt
