Step:
Place chicken chunks in a large pot with a little bit of vegetable oil and add all seasonings; saute on medium high heat.
Once chicken is half way cooked (still see some pink), add in red bell pepper, onion and jalapeo.
Continue to saute until chicken is thoroughly cooked.
Add in the chicken stock, corn, northern beans and tomatoes and simmer over medium heat for 15 minutes.
Add in the cream cheese in chunks and continue to simmer until cream cheese is completely melted and blended in. Serve with toppings of choice. Enjoy!
Ingredients
3 large chicken breasts, cut into bite size chunks
1 red bell pepper, chopped
1 small onion, chopped
4 jalapeos, chopped (remove seeds for not so hot, leave seeds in if you like the heat)
2 cans great northern beans, drained
1 can corn, drained
1 can petite diced tomatoes
4 cups chicken stock
1 pkg cream cheese
1 tsp. cumin
1 tsp. chili powder
1 tsp. garlic powder
1/2 tsp. red pepper (less if you dont want so much heat)
1/2 tsp. pepper
1/4 tsp. salt
Optional toppings for serving: shredded cheddar cheese, green onions, sour cream, bacon
