Prawn Jacket Potato

Preheat oven to 220 fan.

Stab jacket potato all over.

Put jacket potato in the microwave for 6 minutes, flipping halfway.

Put the jacket potato on an oven proof tray, season, add a drissle of olive oil and put in the oven for 25-30 minutes.

Chop the lemon in half and squeeze half into a dish.

Chop a wedge out of the other half.

Add the salad cream, ketchup, paprika and pepper to the lemon juice.

Add the king prawns to the mixture and coat well.

When the jacket potato is done, cut with a cross, pour on the prawns. Top with a little extra paprika and the lemon wedge.
