Step:
Sit greens in sink filled with cold water to rinse off any dirt.
Cut each strip if bacon into 4 pieces. Cook in Dutch oven pot until crispy. Remove bacon and add greens. Fill pot with water until just covering the greens.
Cover pot. After about 30 mins add salt, sugar, pepper and let boil, covered for an hour. Continue to stir about every 30 minutes until finished. Add pinch of red pepper at end. Add salt/ sugar and pepper to your liking.
Add cooked bacon back into pot. Traditionally many used fatback instead of bacon for deeper flavor OR you may used smoked turkey wing or smoked turkey neck!
Enjoy with sweet cornbread with a tad bit of hot sauce and vinegar
Ingredients
5 strips hickory smoked bacon, cut in big cubes
2 lb bag of pre-washed collard greens
1/4 cup sugar
Pinch red pepper flakes
2 tbsp white vinegar
3 tbsp salt... add more to your taste
3 tbsp black pepper
Splash olive oil at the end
