Step:

  1. Heat enough chile oil to cover the bottom of a small sauce pan. Add onion and jalapeƱo. Add a small pinch of salt. Sweat on medium-low heat slowly until onions are nearly caramelized.

  2. Add corn, sugar, bell pepper, avocado, and tomatoes. Stir. Add dry rub and salt. Stir.

  3. When corn is heated through, add cilantro and lime juice. Stir. Serve.

  4.   1. 3 roma tomatoes; seeded, small dice
  2. 3 jalapeƱos; minced
  3. 1 avocado; small dice
  4. 1 small red onion; small dice
  5. 1 roasted red bell pepper; small dice
  6. 1 lime
  7. 1 pound super sweet corn
  8. 1/2 C sugar
  9. 1/2 bundle cilantro; chiffonade
  10. 2 T "Mexican Dry Rub" ( see my recipes)
  11. chile oil; as needed
  12. kosher salt; as needed
