Step:

  1. Heat oil in skillet over medium heat. Divide thick chicken breasts in half for quicker cooking. Season chicken with blackening spice. Once oil is hot, cook seasoned chicken breasts in nonstick skillet until done. Remove from skillet and set aside.

  2. Meanwhile, dice the red onion, tomato, and roasted red peppers. Slice the green onion. Add diced ingredients to medium bowl.

  3. Add corn and all dressing ingredients to the medium bowl. Mix well.

  4. Toss the dressing and fresh ingredients in with the torn romaine lettuce in a large bowl.

  5. Divide the lettuce and dressing into serving bowls and add the sliced chicken and any of the desired optional ingredients on top. Lightly sprinkle either blackening spice or a mixture of chili powder and cumin over the servings (if desired for presentation and flavor).

  7. 8 oz diced roasted red peppers
  8. 4 oz corn kernels (rinsed)
  9. Chicken
  10. 1 package chicken breasts
  11. 1 blackening spice (or creole seasoning)
  12. 1 tbsp olive oil
  13. Optional
  14. 1 tortilla strips
  15. 4 oz shredded cheese (mont. jack)
  16. 1 sliced avacado
  17. Dressing
  18. 1 cup ranch dressing
  19. 1/2 tsp chili powder
  20. 1/4 tsp granulated garlic
  21. 1/2 tsp ground cumin
  22. Hot sauce (Sriracha or tabasco)
