PREHEAT OVEN to 375
Mix peanut butter, butter, brown sugar, and sugar just until creamy.
Add Vanilla
Add eggs to other wet ingredients 1 at a time and mix on slow just until blended in. Don't over mix.
Stir flour, salt, and baking soda together in a bowl before adding to wet mixture.
Line cookie sheet with parchment paper.
Using a small cookie scoop... Shape coomie dough into 1 1/2 inch balls. Roll each ball in the additional sugar.

Bake @ 375 on dark non stick cookie sheet for 7 to 9 minutes and... Let cool on pan for 5 more minutes.
