Step:

  1. Peel oranges with vegetable peeler, careful to not get white rind

  2. Juice orange halves (use more oranges to get the full 1 cup of juice). Save in bowl with rinds for later

  3. Peel and grate ginger, save with oranges

  4. Add honey and water to saucepan over medium high heat. Stir constantly until sugar dissolves. If using simple syrup, skip this step and add a tiny bit to drink when making soda

  5. Reduce heat to medium. Add orange juice, orange peels, ginger and mint leaves (I like to coarsely chop for more flavor). Simmer 5 minutes

  6. Remove from heat and let cool to room temperature

  7. Strain out solids

  8. Store juice in sealed jar for up to one week in the refrigerator

  9. To make soda, pour 1/4 cup of juice over ice and top with club soda or plain water (if don't want carbonated). Can also add vodka, rum, or tequila for an alcoholic drink.

Ingredients

  1. 2 oranges, enough for 1 cup juice
  2. 1/4 cup raw honey (up to half a cup for sweeter)
  3. 1 1/2 cup water
  4. 4 tbsp fresh grated ginger
  5. 1/2 cup mint leaves (or more)
  6. 1 club soda and ice
