Step:

  1. Place chicken in the Crock-Pot season with seasonings and pour on jar of salsa and cook on high till you can shred chicken up then turn to low and mix in corn, beans and butter and continue to cook for about 8 hours

  2. Then mix in cream cheese and continue to cook for about 15 minutes mixing till cream cheese is melted

  3. Serve over rice or in taco shells with a little sour cream, salsa and cheese or eat with fritos corn chips if desired !

Ingredients

  1. 4-5 thawed chicken breast boneless and skinless
  2. 1 teaspoon salt (I like kosher or Himalayan salt)
  3. 1 teaspoon cracked black pepper
  4. 2 Tablespoons lime juice
  5. 1 teaspoon garlic powder
  6. 1 teaspoon ground cumin
  7. 1 teaspoon dried cilantro
  8. 1 teaspoon onion powder
  9. 1/2 Tablespoon chili powder
  10. 24 oz jar of mild salsa
  11. 1 can corn drained
  12. 1 can black beans rinsed and drained
  13. 2 (slices) Tablespoons of butter
  14. 1 (8 oz) blocks of Philadelphia cream cheese cubed
  15. Toppings if desired below
  16. Taco shells
  17. fritos corn chips
  18. Cooked white Rice
  19. Sour cream
  20. Salsa
  21. Shredded cheese (I like Mexican blend cheese)
