In a large pot over medium heat, saut the onion and celery in olive oil for 2 minutes. Add the rice and continue cooking until the rice has browned slightly. Stir in the garlic and cook an additional minute.
Add the chicken broth (I use homemade carcass broth) and bring to a boil. Reduce heat to low, stir in the basil, oregano and pepper, cover the pot and cook until rice is tender, about 20 minutes. (See note below.)
Stir in the chicken pieces and continue cooking just until the chicken is warmed through, about 5 minutes.
Remove from heat and stir in the lemon juice and feta cheese. Serve immediately.
NOTE: For this recipe, I use a rotisserie chicken from the deli. After removing the meat, I make a rich chicken broth from the carcass. I use about half the meat from the rotisserie chicken in this recipe, chopped into large pieces.

1/3 cup jasmine rice (uncooked)
5 cup chicken broth
1/4 tsp basil
1/4 tsp oregano
ground black pepper
1/2 lemon (just the juice)
1 1/2 cup cooked chicken (see Note)
1/3 cup feta cheese, slightly crumbled
