Heat a pan of oil about 2 inches, and bring it up to around 325/340
Cut haddock into bite size pieces, pat dry with kitchen paper.
Mix flour, cornstarch, baking powder, baking soda, salt n pepper and cold water to make a smooth batter.
Add haddock pieces to the batter and carefully put into heated oil around 5-6 pieces at a time so the oil doesn't cool down to much. If this happens the batter will be soggy. Fry for 4-5 minutes or until golden brown and crispy.
Remove and drain well on kitchen paper, sprinkle immediately with chili salt on a warmed plate, continue until all of the fish is cooked and dig in
This batter can be used with cod, catfish, tilapia and onion rings

1 cup all-purpose flour
2 tbsp cornstarch
1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup water for flour (ice cold water gives a better batter)
