Step:

  1. Heat oil in a large pan.

  2. Add the leeks & ginger and cook slowly for 2-3 minutes, until the leeks start to become soft.

  3. Add the parsnips and cook for 7-8 minutes longer until they begin to become soft.

  4. Pour in the wine and stock (or water) and bring to a boil.

  5. Lower heat and simmer for 20-30 minutes, or until the parsnips are tender.

  6. Purée in a blender or food processor until smooth.

  7. Season with salt and pepper to taste.

  8. Garnish with dusting of paprika.

  2. 2 cup leeks, sliced
  3. 2 tbsp ginger root, peeled & minced
  4. 5 cup parsnips, roughly chopped
  5. 1 1/4 cup dry white wine
  6. 5 cup vegetable stock or water
  7. 1 dash salt
  8. 1 dash pepper
  9. 1 dash paprika
