Step:

  1. Boil the potatoes until almost cooked and tender.

  2. Meanwhile, season chicken with salt and pepper. Heat 1 tbsp oil in a non-stick skillet over medium-high heat until just smoking. Add chicken and cook until lightly browned about 3 minutes. Transfer chicken to plate.

  3. Add remaining oil to pan and cook onion, curry, and 1/2 tsp salt until softened, about 5 minutes. Stir in garlic and ginger and cook about 30 seconds more.

  4. Whisk broth and cornstarch together and then stir the mixture into the skillet. Add the cauliflower and mostly-cooked potatoes. Reduce the heat to medium-low, cover, and cook until veggies are tender, about 7 -10 minutes.

  5. Stir in chicken with any juices and peas and return to a simmer.

  6. Off the heat, stir in the yogurt and cilantro and season with salt and pepper to taste.

  3. 1 onion, minced
  4. 2 tsp curry powder
  5. 4 clove garlic, minced
  6. 1 tbsp fresh ginger, grated
  7. 1 1/2 cup chicken broth (low sodium)
  8. 1 tbsp cornstarch
  9. 3/4 lb red potatoes, cut into 1/2 inch chunks
  10. 3/4 lb cauliflower florets (2 cups)
  11. 1/2 cup frozen peas
  12. 1/2 cup plain yogurt
  13. 1/4 cup cilantro, minced
