Step:

  1. Heat oil in pressure cooker on saute, lid off.

  2. Coat chicken in flour and generous salt and pepper.

  3. Brown chicken.

  4. Brown onion, peppers and garlic.

  5. Add remaining ingredients (excluding corn), close pressure cooker lid, set to high pressure for 7 minutes.

  6. Quick release cooker, remove lid and add corn.

  7. Serve with cheese and chips.

  1. 2 teaspoon olive oil
  2. 2 lbs chicken breast diced
  3. 2 tbs all purpose flour
  4. Salt and pepper
  5. 1 medium red onion
  6. 4 cloves crushed garlic
  7. 1/2 green bell
  8. 2 jalapeos
  9. 1/2 cup dry white wine
  10. 4 cups chicken stock
  11. 2 cans rotel
  12. 2 can tomato sauce
  13. 2 tsp cumin
  14. 1 tsp chili powder
  15. 1/4 tsp cayenne powder
  16. 6 tbs fresh chopped cilantro
  17. 1/2 tsp salt
  18. 1/4 tsp pepper
  19. 2 cups frozen corn
  20. Shredded cheddar cheese
  21. Tortilla chips
