Step:

  1. Preheat oven to 350

  2. With electric mixer, beat eggs and sugar for 7 minutes, until doubled in size (very important since there is no levening agent in this recipe)

  3. Add butter, vanilla and zest

  4. Mix 2 minutes

  5. Fold in flour until about half mixed

  6. Gently fold in cranberries

  7. Pour into greased 9x13 pan

  8. Bake 40-45 minutes

  9. Cool completely before cutting

Ingredients

  1. 3 eggs
  2. 1 cup sugar
  3. 3/4 cup softened butter
  4. 1 tsp vanilla
  5. 1 Tbs fresh orange zest
  6. 2 cups AP flour
  7. 12 oz fresh cranberries
