Step:
Whisk jalapeno, shallot, vinegar, honey, and oil in a small bowl.
Let sit until flavors combine, about 15 minutes.
Combine peaches and plums in a large bowl.
Add 1/2 cup of fruit to bowl with jalapeno mixture and mash with a potato masher until smooth.
Add mashed fruit mixture and basil to bowl with cut fruit and stir until combined.
Season with salt and let sit until flavors combine, about 15 minutes.
Serve and enjoy.
*This salsa can be made up to 4 hours in advance, but if left any longer, the fruit will become mushy.*
**If you like your salsa spicy, don't seed the jalapeno.**
Ingredients
1 shallot, minced
2 tsp cider vinegar
2 tsp honey
2 tsp extra virgin olive oil
1 tbsp finely chopped fresh basil
1 jalapeno, seeded and minced
2 ripe peaches, pitted and finely chopped
2 ripe plums, pitted and finely chopped
1 salt to taste (I just add a tiny amount because I'm not a fan of salt)
